WHAT’S COOKING

JAMAICAN CURRY CHICKEN

INGREDIENTS

  • 2½–3 lbs chicken, chopped into pieces
  • 2 tbsp Jamaican curry powder
  • 1 tsp all-purpose seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 stalks scallion, chopped
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 sprig thyme
  • 1 scotch bonnet pepper
  • 2 medium potatoes, peeled and diced
  • 2 tbsp vegetable oil
  • 2 cups water or chicken broth

iINSTRUCTIONS

1. Season the Chicken

Wash and season the chicken with curry powder, all-purpose seasoning, salt, black pepper, garlic powder, paprika, scallion, onion, garlic, and thyme. Let

2. Burn the Curry

Heat oil in a large pot over medium heat. Add 1 extra tablespoon of curry powder to the oil and stir for about 20–30 seconds until fragrant. This step gives Jamaican curry its rich flavor and color.

3. Brown the Chicken

Add the seasoned chicken to the pot and stir well to coat with the curry. Cook for about 8–10 minutes until the chicken begins to brown slightly.

4. Simmer

Add water or chicken broth along with the scotch bonnet pepper. Cover and let simmer for about 25 minutes.

5. Add Potatoes

Add the diced potatoes and continue cooking for another 20–25 minutes until the chicken is tender, potatoes are soft, and the gravy thickens.

6. Taste & Serve

Adjust seasoning if needed and remove the scotch bonnet if you prefer less heat.
